Then you add vegetables in a specific order. Finally, you add liquid and slow-cook everything together until the meat falls apart and the flavors meld.</p>

<p style="text-align: justify;">Like many stews, lamb navarin requires patience and care, but no difficult techniques nor ingredients. Here is a detailed look at the ingredients needed.</p>
<ol style="text-align: justify;">
<li><strong>Lamb.</strong> Lamb shoulder is often considered the best cut for stews. It has a good amount of marbling, which adds flavor and keeps the meat moist during the slow cooking process. Ask your butcher to trim the larger fat pieces and to cut the meat into 2-inch (5cm) chunks – slightly larger than for your classic beef stew.</li>
<li><strong>Vegetables.</strong> Onions, carrots and turnips are staples of a Lamb Navarin. When making it in the Spring, new potatoes, pearl onions and peas are also included, adding variety and color to the stew. Note that you can use fresh or frozen peas. Lastly, while some recipes call for simmering the pearl onions in the stew, I prefer to cook and caramelize them on the side to add delicious bursts of sweetness.</li>

<li><strong>Brown the lamb pieces.</strong> The lamb is first browned in oil, contributing to the rich flavor of the sauce. Do not rush this process and make sure the pieces bear a nice brown crust before adding the first set of vegetables.</li>
<li><strong>Add the vegetables. </strong>Garlic, onions and carrots are added to the meat and are sauteed quickly. You then add tomato paste, flour, broth, wine and start simmering all the ingredients together.</li>
<li><strong>Add more vegetables.</strong> New potatoes and turnips are added about 15 minutes before the end of the cooking time. Peas are added just a few minutes before serving. <h3 style="text-align: justify;">Are the peas mandatory for this dish?</h3>
<p style="text-align: justify;">Mandatory, no. Traditional to the dish, yes. As with any dish, don&#8217;t feel obligated to add ingredients you don&#8217;t like. If peas aren&#8217;t your thing, leave them out and add a few more carrots instead. Or cook the peas on the side for those who do enjoy them!</p>
<h3 style="text-align: justify;">What if I can&#8217;t find lamb shoulder?</h3>
<p style="text-align: justify;">No problem, both lamb leg and lamb neck are excellent substitutes for lamb shoulder. Those are also tougher, marbled cuts that can stand up to the longer cooking meant for a stew. Lamb neck may also be a cheaper option where you are, albeit more difficult to find outside of a butcher shop.</p>
<h3 style="text-align: justify;">I don&#8217;t like or want alcohol in the dish, what can I do?</h3>
<p style="text-align: justify;">Aside from the traditional explanation of &#8220;the alcohol will cook out of the dish&#8221;, if you do not want to add the wine, you can replace it with chicken stock. Just please be aware it will alter the taste of the dish, as wine imparts a nice sweetness and complex flavors.</p>

When the oil is sizzling, add the lamb cubes and brown them for about 3 minutes on each side. Do not rush this process, the lamb pieces should develop a nice brown crust.</p>

<p style="text-align: justify;"><strong>Step 2 -</strong> Once the lamb is browned, add the carrots, onion and garlic. Stir and sauté for 2 minutes. Add the tomato paste and stir to coat. Add the flour, stir to coat and until no dry flour remains. Add the bay leaf, the thyme, the white wine and stock. Stir, cover with a lid and bring to boil. When the liquid is boiling, lower the heat to medium-low and simmer for 45 minutes.</p>

<p style="text-align: justify;"><strong>Step 3 -</strong> Add the potatoes and turnip and simmer for 15 minutes. Finally, add the peas and cook until they rise to the top (1-2 minutes for fresh peas, 3-4 minutes for frozen). Taste and adjust seasoning if needed.</p>
<p style="text-align: justify;"><strong>Step 4 -</strong> In a separate pan, heat up the butter, sugar, pearl onions and 3 tablespoons of water over medium heat. Let the butter and sugar melt and slowly caramelize the onions. Cook until all the water is evaporated and onions are caramelized. This can take up to 8-10 minutes.&nbsp;</p>
<p style="text-align: justify;">For serving, ladle the navarin into serving bowls, dress with a few caramelized onions and fresh parsley leaves.</p>

You can prepare only two lamb chops (for a perfect dinner for two) or double – or even triple &#8211; the number of lamb chops to feed a large crowd (as long as it all fits onto one pan). The amount of potatoes and carrots can vary accordingly. The cooking time always remains the same.</li>
<li><strong>For the potatoes,</strong> I used <a href="https://www.littlepotatoes.com/product/terrific-trio/">Red, Yellow and Blue Creamer Potatoes</a>.</li>
<li><strong>Aside from carrots,</strong> you can add (or substitute with) sweet potatoes, rutabagas, parsnips, turnips or beets.</li>

											<p>4 shoulder lamb chops<br />
1 garlic head<br />
4 sprigs rosemary<br />
3-4 medium carrots, peeled and roughly chopped<br />
1.5 lb (680g) baby potatoes (ie. creamer), halved<br />
1 tsp salt, divided<br />
1 tsp fresh ground black pepper, divided<br />
4 tbsp (60ml) Extra-virgin olive oil</p>

                    <h3 class="penci-recipe-title">Instructions</h3>
					<p style="text-align: justify;"><strong>2 hours before you start cooking,</strong> slice the garlic head in half crosswise. Reserve one half. Separate and peel the other half and finely chop those garlic cloves. Stem and chop 2 sprigs of rosemary (keep the other 2 whole sprigs aside). Place the lamb chops on a cutting board, pat them dry with paper towel and slice small cuts into them (4-5 cuts/chops). Insert a thin slice of garlic into each cut. Place the chops in a shallow dish, with 2 tbsp of olive oil, half the amount of the chopped garlic, half the amount of the chopped rosemary, ½ tsp salt, ½ tsp black pepper. Rub the marinade all over to make sure the lamb is evenly coated. Cover with remaining 2 sprigs of rosemary. Cover with plastic film and set aside to marinate for 2 hours (at room temperature).</p>
<p style="text-align: justify;">Pre-heat your oven to 450F (232C), with a rack in the middle.</p>
<p style="text-align: justify;">In a large mixing bowl, combine the baby potatoes and carrots with 2 tbsp of olive oil, the rest of the chopped garlic, the rest of the chopped rosemary, ½ tsp salt, ½ tsp black pepper. Toss to coat evenly and transfer to a large rimmed baking sheet. Add the whole half of the garlic head (cut side down). Roast until tender for about 30 minutes (tossing the potatoes and carrots half-way (at the 15 minute mark) with a spatula, so they don’t get stuck to the bottom of the pan.<br />
Nestle the lamb chops in the pan and cook for 30 more minutes (or 35 to 40min if you like your lamb a little more well done).</p>
<p style="text-align: justify;">When ready, take the pan out of the oven and carefully unpeel the halved garlic head from the pan with a spatula and squeeze out the cloves. Serve each lamb chop with potatoes, carrots and a few roasted garlic cloves on top.</p>

<p style="text-align: justify;">Today, I am showcasing their <a href="https://shop.olivtr.com/products/garlic" target="_blank" rel="noopener">Garlic-Infused Extra Virgin Olive Oil</a>. It is so fragrant, sharp and intensely garlicy (which I love!). The first time I tried it, I knew it would add a lot of character to any grilled meats, fish or vegetables.</p>

<p style="text-align: justify;">I made double-use of the Garlic-Infused EVOO for this Lamb Chops and Summer Veggies recipe. I first used it as a marinade for the lamb chops and summer vegetables, along with <a href="https://www.marthastewart.com/340289/herbes-de-provence">Herbes de Provence</a> and seasonings. No need for garlic or onions, as the EVOO did all the work on its own.</p>
<p style="text-align: justify;">This marinade infused so much flavour into the meat and helped get that nice char we’re all looking for when grilling. The veggies (zucchini, eggplant and red peppers) ended up juicy, with mellow flavours reminiscent of a ratatouille.</p>

<p style="text-align: justify;">I also used the Garlic-Infused EVOO to make a Nice-Style pesto sauce. Unlike the Italian pesto you might be more familiar with, a Nice-style pesto sauce (known as “pistou”) does not contain pine nuts. It simply includes basil leaves, parmesan and EVOO –letting the flavours of the oil shine a little more (and it’s much more cost effective!).</p>
<p style="text-align: justify;">This “pistou” is traditionally used in the Provencal <a href="https://www.jamieoliver.com/recipes/vegetables-recipes/pistou-soup/">Soupe au Pistou.</a> But it’s also delicious in pasta, risotto and on top of roasted meats and veggies – just like in this recipe. It is a great sauce to have in your fridge during the Summer, to turn anything that’s a bit boring into a distinct dish – with a great Mediterranean flare. &nbsp;</p>
<p style="text-align: justify;">This recipe makes 2 servings and leaves you with a 250ml pesto jar, that will keep in the fridge for 5-7 days.</p>

											<p><strong><em>For the pesto sauce:</em></strong><br />
1 clove of garlic<br />
8 sprigs of fresh basil (about 24 leaves)<br />
60 g Parmesan cheese<br />
1/3 cup Garlic-infused EVOO<br />
Salt, pepper to taste</p>
<p><strong><em>For the main:</em></strong><br />
2 lamb chops<br />
1 eggplant<br />
1 zucchini<br />
1 red pepper<br />
4 tbsp Garlic-Infused EVOO<br />
1 lemon<br />
2 tsp Herbes de Provence<br />
Salt, pepper to taste</p>

                    <h3 class="penci-recipe-title">Instructions</h3>
					<p style="text-align: justify;"><em><strong>For the pesto sauce:</strong></em><br />
Wash the basil leaves (discard the stems), peel the garlic and chop the parmesan roughly. Throw the ingredients into a mixer/food processor (or use a mortar and pestle) and puree to make a chunky paste. Slowly add in the EVOO, little by little, while continuously mixing. If needed, finish off with salt and pepper to taste.</p>
<p style="text-align: justify;"><strong><em>For the main:</em></strong><br />
At least two hours before cooking (or even better, the night prior), pour 2 tablespoon of EVOO into a ziploc bag, with 1 teaspoon of Herbes de Provence, the juice of ½ a lemon, and the lamb chops that you’ve seasoned with a pinch of salt and pepper on each side. Seal the bag, and massage the lamb chops in the bag to make sure they are evenly coated with the herbs and oil. Refrigerate.</p>
<p style="text-align: justify;">Two hours before (not the night before) wash and chop the eggplant, zucchini and red pepper into large cubes (as pictured). Throw them in a ziploc bag, with 2 tablespoons of EVOO, 1 teaspoon of Herbes de Provence, a pinch of salt and pepper, and the juice of the other ½ of the remaining lemon. Refrigerate.</p>
<p style="text-align: justify;">Cook the lamb chops (on a barbecue grill or a heavy skillet) to desired doneness, about 3 minutes per side for medium-rare. Cook the summer vegetables (preferably in a heavy skillet, not directly on the grill) for 15-20 minutes until cooked through and glistening (but not mushy).</p>
<p style="text-align: justify;">For serving, present the lamb chops and Summer veggies in a dish/plate and dress with a generous dollop of pesto sauce on top.</p>
