<li><strong>Butter and olive oil.</strong> We’re using both butter and olive oil to sear the chicken pieces. The butter helps develop a nice golden sear while the olive oil keeps the butter from burning (since it has a higher smoke point).</li>
<li><strong>Garlic.</strong> 40 cloves of garlic, no more, no less! I usually need 4 heads of garlic to get 40 cloves. They need to be peeled and kept whole. This is frankly the tedious part of the recipe, but worth it.</li>
<li><strong>Cognac.</strong> We use cognac to deglaze the pan after the chicken and garlic are seared. This adds sweet, caramelized notes to the sauce. The alcohol completely burns off while cooking.</li>
<li><strong>White wine and chicken stock.</strong> They form the base of the braising sauce for the chicken. Choose a dry, low-sweetness white wine so its flavor stays subtle and doesn’t overwhelm the dish. <li>About 45 minutes before using, take the chicken out the fridge. Pat dry the pieces all over with paper towel to remove any excess moisture. This will help ensure a nice and crispy skin when cooking. Leave the chicken on the counter to allow to warm up to close to room temperature before cooking.</li>
<li>&nbsp;Season the chicken with salt and pepper on both sides. Place the 1/3 cup (42g) of flour in a shallow plate and roll each chicken piece in flour to cover evenly. Even easier, throw everything in a freezer bag and shake!</li>
<li>Preheat your oven to 375°F (190°C) with a rack in the middle.</li>
<li>Melt the butter and oil in a large heavy-bottom frying pan over medium heat. Add the chicken pieces and cook for 7-8 minutes on each side, until the skin is crisp and golden. Transfer the chicken to a plate.</li>
<li>Add the garlic cloves to the same pan and cook for 3-4 minutes, stirring occasionally, until the cloves start to golden lightly.</li>
<li>Pour the cognac in to deglaze. Use a large wooden spoon to swirl around the garlic cloves and scrape all the bits at the bottom of the pan.</li>
<li>When the liquid has mostly evaporated, nestle the chicken pieces back into the pan with the garlic cloves around. Pour the chicken stock and white wine into the pan. Top chicken pieces with sprigs of thyme.</li>
<li>Cover with a lid and place in the oven. Cook for 1 hour and 15 minutes, until the chicken is tender. You can use a small pointy knife to test the tenderness of the chicken. You can remove the lid for the last 10 minutes to get a crisper skin on top.</li>
<li><em>Optional: If you want to add heavy cream to enrich the sauce</em>. After you take the dish out of the oven, place it back on the stovetop on a medium-low setting. Transfer the chicken pieces onto a plate, cover with foil. Stir in 2 tablespoons (30ml) of heavy cream to the sauce and simmer for 1 minute. Add the chicken pieces back in and serve.&nbsp;</li>

This is one of the most popular types of roasts you can find at the butcher or the grocery store, and often the most affordable. This cut is from just below the shoulder and usually quite lean. The cylindrical shape of a loin make it easy to cook as heat can be distributed evenly. Most pork loins weigh around 2lbs, which is exactly what you need for this recipe. I highly recommend you purchase a tied pork loin to cook it through evenly. Either ask your butcher to tie it or you can do it yourself. <p style="text-align: justify;">You shouldn’t reach for a pricy bottle, but not the cheapest cooking wine either. Splurging a little for the white wine will only make your dish taste better!</p>
<h3 style="text-align: justify;"><strong>Can you make this pork loin recipe in a slow cooker?</strong></h3>
<p style="text-align: justify;"><strong>I don&#8217;t recommend using a slow cooker for this recipe.</strong> Cooking in a braiser or Dutch oven allows the meat to brown beautifully, enhancing both flavor and appearance. You also need to sear the onions until they&#8217;re slightly caramelized, which is hard to do in a slow cooker.</p>

					<p><strong>Step 1 -</strong> Place the dried prunes in a bowl with&nbsp; Armagnac/Cognac and stir to coat. Let the prunes soak for 1-2 hours.&nbsp;</p>
<p><strong>Step 2 -</strong> One hour before you start cooking, take the pork roast out of the fridge and season it generously on all sides with 1 teaspoon of salt and 1 teaspoon of black pepper. Leave on the counter to warm to room temperature.</p>

<p style="text-align: justify;"><strong>Step 4 - </strong>Add the onions, bacon strips, rosemary,&nbsp; ¼ teaspoon of salt and ½ teaspoon black pepper into the same skillet and sauté for 15 minutes, until the mix becomes fragrant and the onions are lightly caramelized. Add the white wine and chicken stock. When the liquid starts simmering, add the pork back into the pan, cover with a lid and cook for 45 minutes on medium-low heat.</p>
<p style="text-align: justify;"><strong>Step 5 - </strong>Drain the prunes from the Cognac (or Armagnac) and add into the sauce. Don’t add the alcohol. You can pour it into a glass for sipping. Cover with a lid and cook for 20 more minutes.</p>

<p style="text-align: justify;">Check if the pork is cooked: a meat thermometer should read 145°F (74°C). If it hasn’t reached this temperature yet, let it cook 5 to 10 extra minutes.</p>
<p style="text-align: justify;"><strong>Step 5 - </strong>Take off the lid, and simmer the sauce for 5-10 minutes until you reach the desired consistency. The sauce should have a slightly syrupy consistency. Taste and adjust seasoning if needed.</p>
<p style="text-align: justify;">For serving, slice the pork roast into &nbsp;⅓” thick slices and pour sauce over top of each slice.</p>

<h2 style="text-align: justify;"><strong>Which white wine to choose for braising?</strong></h2>
<p style="text-align: justify;">For this recipe (or for any wine braised chicken recipe really),<strong>&nbsp;I almost always recommend using a white wine that is dry and crisp</strong>. A “dry” white is any white wine that isn’t sweet. And a “crisp” white is a wine that has a high acidity.&nbsp; &nbsp;</p>
<p style="text-align: justify;"><strong>Some of my recommendations are:</strong></p>
<ul style="text-align: justify;">
<li><strong>Sauvignon Blanc</strong>– this is my go-to white wine for cooking. It provides a great acidity.</li>
<li><strong>Pinot Grigio</strong>– a neutral white wine, which makes it easy to cook with and is very versatile.</li>
<li><strong>Unoaked Chardonnay</strong>– this one is slightly richer than the two above.</li>
<li><strong>Dry Marsala</strong>– it adds lovely nutty notes and creates a great caramelization.</li>
<li><strong>Dry Sparkling Wine</strong>– it is a light and crisp option. Note that the bubbles dissipate when cooking, so you won’t notice this was a sparkling wine.&nbsp;</li>
</ul>
<p style="text-align: justify;">In any case,&nbsp;<strong>avoid opting for sweet white wines</strong>&nbsp;(ie. Riesling, Sauternes) which will create over-caramelization and/or sweetness to the finish dish. This recipe already relies on peaches to provide a delightful natural sweetness. Also,&nbsp;<strong>avoid full-bodied, rich and/or oaky white wines</strong>&nbsp;(ie. Oaked Chardonnay) which tend to develop bitter undernotes when cooking.</p>
<p style="text-align: justify;">Lastly, you shouldn’t necessarily reach for a “cheap” bottle, but one that is still drinkable – trust me, it will really make a difference. Forget the “cooking wines” from the grocery store!&nbsp;</p>

<h2 style="text-align: justify;"><strong>Can you substitute the chicken thighs? </strong></h2>
<p style="text-align: justify;">Skin-on, bone-in chicken thighs are my pieces of choice for this type of wine-braised recipes. They are so flavorful and turn fork-tender. However, <strong>yes, you can replace chicken thighs for skin-on legs or quarters if you would like.</strong> Avoid using chicken breasts as they will likely become too tough after 30 minutes of baking in the oven.</p>
<p style="text-align: justify;">Whether you choose chicken thighs, legs or quarters, <strong>leaving the skin on the chicken is essential&nbsp;to this recipe</strong>. The chicken will be first cooked, skin-side down, in the pan. The fat from the skin will melt and render into the pan, and be used later to caramelize the shallots and garlic, and as a base for the sauce. It will contribute greatly to building flavors in this dish. You can choose to remove the skin later – in your plate, once the dish is served.</p>

<p style="text-align: justify;"><strong><em>Step 5 -</em></strong> Nestle the chicken thighs back into the pan. Pour the white wine into the pan (around the chicken pieces, not on top so the chicken skin remains crispy) and transfer the pan into the oven for 15 minutes (uncovered).</p>

<p style="text-align: justify;">Parallely, this season also sees fresh grapes making their way into French kitchens and in our seasonal recipes. And among these famous grape harvest recipes, is the <strong>“Cailles aux Raisins” (Quails with Grapes)</strong>. This classic French recipe features whole quails wrapped in bacon and served on a bed of cooked grapes. It is an exquisite dish, that is often made for big occasions.</p>

<h2 style="text-align: justify;"><strong>A simplified, more approachable “Cailles aux Raisins”</strong></h2>
<p style="text-align: justify;">As a way to make this “Cailles aux Raisins” recipe more approachable and easy to make on the daily, I came up with these <strong>Bacon-wrapped Chicken Breasts in Grape Sauce</strong>. The whole quails are replaced by simple chicken breasts draped in bacon strips and served on a bed of creamy grape sauce, made with crème fraiche, honey and spiked with sage.</p>
<p style="text-align: justify;">I know boneless, skinless chicken breasts sort of have a reputation for being bland and dry. But in this recipe, they stay moist and flavorful when wrapped in bacon. The sauce is sweet and tangy thanks to the lightly blistered grapes and honey, yet mellowed down with the sage and smooth crème fraiche.</p>
<p style="text-align: justify;">It is a delicious combination of textures and flavors, and a great recipe to easy your way into Autumn…</p>
<h2><strong>How to make </strong><strong>these Bacon-Wrapped Chicken Breasts in Grape Sauce</strong></h2>
<p style="text-align: justify;">The recipe starts by salting the chicken breasts 2 to 3 hours before you start cooking (leave them on the counter). This allows enough time for the meat to fully absorb the salt, and results in evenly seasoned and moist chicken breasts. After that, the chicken then get wrapped in bacon, adorned with a fresh sprig of rosemary and baked in the oven.</p>

<p style="text-align: justify;">In a large frying pan, caramelize the onions and garlic in butter and extra-virgin oil. Add the grapes (previously marinated in wine vinegar, lemon juice and zest) along with sage and honey. Cook them until fragrant and lightly blistered. Add the crème fraiche and stir to combine. 					<p style="text-align: justify;"><strong><em>Make sure you read my cooking notes before you start.</em></strong></p>
<p style="text-align: justify;">2 to 3 hours before starting cooking, salt rub the chicken breasts on both sides. Sprinkle with black pepper and nutmeg, and leave on the counter.&nbsp;</p>
<p style="text-align: justify;">
When ready, pre-heat your oven to 375<b>°</b>F/190<b>°</b>C (or 360<b>°</b>F/185<b>°</b>F&nbsp;for a convection oven).</p>
<p style="text-align: justify;">
Rinse the grapes thoroughly and pat them dry with paper towel. Cut about two thirds of the grapes in half, leaving a third of them whole. Transfer the grapes into a bowl, add salt, black pepper, vinegar, lemon juice and zest. Stir to coat the grapes evenly and set aside for about 30 minutes.</p>
<p style="text-align: justify;">
Wrap the chicken breasts with two slices of bacon each, tucking the ends underneath and slipping a sprig of fresh rosemary in-between. Set a cooling rack in a rimmed baking sheet and transfer the chicken breasts with the bacon to the rack. Top each chicken breast with 2-3 dots of butter. Bake the chicken breasts for 30 minutes (or 25 minutes in a convection oven). If you have a meat thermometer, the chicken breasts should reach an inside temperature of 165<b>°</b>F/74<b>°</b>C. Set the chicken breasts aside, covered with foil.</p>
<p style="text-align: justify;">
In a large frying pan (no lid needed) over medium-heat, melt the butter with the EVOO. Add the onion and garlic, and cook for 7-8 minutes, stirring occasionally until the onion is lightly caramelized. Add the grapes, honey and sage and cook for 7-8 minutes, stirring occasionally until softened (some grapes might blister and/or burst). Stir in the crème fraiche and cook for 5 minutes. Nestle the chicken breasts in the pan, and cook for 5 more minutes.</p>
<p style="text-align: justify;">
Serve immediately, with white rice and/or French beans in butter.</p>

But there isn’t any slow-braised meat here. It’s a simple poached egg that is the star of the show, served atop garlicky toast.</p>
<p style="text-align: justify;">This makes this dish way quicker to make, easier and much lighter than Beef Bourguignon; but with the same amazing layers of flavors from the earthy mushrooms, tangy pearl onions and salty pancetta bites.</p>

<h2 style="text-align: justify;">Cooking notes:&nbsp;</h2>
<ul>
<li style="text-align: justify;"><strong>French “lardons”</strong> (bacon matchsticks) are traditionally used in this dish. As a substitute, pancetta or bacon sticks work perfectly.</li>
<li style="text-align: justify;"><strong>Cremini mushrooms</strong> are often used for this dish, but you can opt for any type of mushrooms of your choosing. I really enjoy meaty shiitake mushrooms, which I have used here for the photos.&nbsp;</li>
<li style="text-align: justify;">Choose a <strong>dry red wine</strong>.</li>
<li>Choosing a crusty, country-style bread is best. Although, a <strong><a href="https://www.pardonyourfrench.com/classic-pain-de-mie/">Classic French pain de mie</a></strong> works well too (more tender).</li>
<li style="text-align: justify;"><strong>Thyme</strong> is traditionally used as an aromatic for this dish, but I can see bay leaves working well here too.</li>
<li style="text-align: justify;"><strong>The assembling of the dish should be quick</strong> – you don’t want any of the components (sauce/egg/toast) to get cold before serving.</li>
<li style="text-align: justify;">It is very easy to scale this recipe <strong>up or down</strong> (4 eggs, 4 toasts, etc&#8230;).</li>

4 tbsp (60g) unsalted butter,divided<br />
½ cup (115g) pancetta, sliced in 1/3-inch (0.83cm) thick sticks (or bacon)<br />
80g pearl onions, peeled and kept whole<br />
2 cups (about 200g) mushrooms (cremini, shiitake, button or oyster), scrubbed and kept whole<br />
1 garlic clove, peeled and finelly chopped<br />
3 sprigs of dried thryme<br />
2 cups + 1 tbsp (about 500ml) red wine<br />
1/3 cup + 1 tbsp (about 100ml) beef stock<br />
½ tsp salt<br />
½ tsp fresh ground black pepper</p>
<p><strong>For the eggs:</strong><br />
4 large eggs, fresh<br />
¼ cup (60ml) white vinegar</p>
<p><strong>For the toasts:</strong><br />
4 large slices of country-style bread<br />
1 garlic clove, peeled<br />
4 tbsp (60g) unsalted butter, at room temperature</p>
<p>Fresh flat parsley leaves, for garnish</p>

                    <h3 class="penci-recipe-title">Instructions</h3>
					<p style="text-align: justify;"><em><strong>Step 1 –</strong></em> Melt 3 tbsp (45g) of butter in a large frying pan over medium heat. Add the pancetta sticks and cook until crispy and golden (7-10 minutes). Add the pearl onions and cook for 5 minutes until they are slightly caramelized. Add the mushrooms, garlic and thyme and cook until the mushrooms are fork-tender.</p>
<p style="text-align: justify;"><em><strong>Step 2 –</strong></em> In a small saucepan, bring the red wine to a simmer and reduce by a third. Add the beef stock and reduce by a third again. Stir in 1 tbsp (15g) of butter and finally stir in the onions, mushrooms and pancetta. Adjust seasoning if needed (salt, pepper).</p>
<p style="text-align: justify;"><em><strong>Step 3 –</strong></em> Break each egg into individual ramekins. Bring a medium pot of water (at least 5cm deep of water) to a gentle simmer with the vinegar. With a wooden spoon, stir the water to create a gentle whirlpool in the center (for the egg whites to wrap around the yolk). Immediately and carefully drop an egg in the center of the ‘whirlpool’. Cook for 3 to 4 minutes, until the white looks set. Carefully lift the egg with a slotted spoon and transfer it onto a kitchen cloth and paper towel. Repeat with the other eggs.</p>
<p style="text-align: justify;"><em><strong>Step 4 –</strong></em> Brush the garlic clove on each side of the bread slices and then spread ½ tbsp (7.5g) of butter on each side too. Toast each slice on a large frying pan for about 3-4 minutes until crisp and golden.<br />
For serving, place a piece of toast on a plate. Cover with ¼ of the Meurette sauce and top with a poached egg. Season to taste, and garnish with fresh parsley. Enjoy immediately.</p>
