<li>Sprinkle about ¼ cup of the sugar evenly over the pastry. Using a rolling pin, gently press the sugar into the dough. Flip the dough and repeat: sprinkle about ¼ cup sugar and gently press it with a rolling pin. Fold both long sides by a quarter inward toward the center, then fold again so the two sides meet in the middle, leaving a ¼ inch space in the middle. Finally, fold one half over the other to form a log.</li>
<li>Transfer the log to the fridge for 15 minutes, to chill. Meanwhile, preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.</li>
<li>Using a sharp knife, slice the log into 1/3 inch (1 cm) thick pieces. Toss each slice into the bowl of remaining cinnamon sugar to coat evenly on both sides. Place slices cut-side up on the baking sheet, leaving space between each cookie. Slightly open each cookie "ear" to form rabbit ears.</li>
<li>Bake for 14-15 minutes, flipping the cookies after 10 minutes, until golden brown and caramelized. Transfer cookies onto a cooling rack and let cool completly before serving.</li>
