Hi Chris! Hi Romila, yes you can freeze the croissants to bake later: freeze them right after shaping and before proofing. To do so, freeze the croissants on on a baking sheet for 2 hours, and then transfer them in a ziploc bag (only when they are frozen all the way through). The day before you want to eat the croissants, place them back on a baking sheet and let them defrost overnight at room temperature. The croissants will proof as they defrost.
