I&#039;m glad you found it as well, Hannah! We have an abundance of persimmon on market stalls here as well and I absolutely love to eat them however I can. As for your question, the fan could definitely help, but it could also overbake the cake, unless you lower the temperature about 10F. It could just be that your oven runs a touch less hot, or sometimes it&#039;s just the ingredients differ slightly and brown differently. I&#039;d try the fan with a lower temp, or just try baking a few more minutes at the regular temp.

Wow, you dug up a very old recipe of mine, before adding weights to all my recipes! I am slowly going back and adding measurements to my earlier recipes.

So, for this recipe here... 113gr butter, 300gr maple syrup, 180gr flour, 150gr of buttermilk. Now, as for replacing buttermilk, it&#039;s very simple. You can add a splash (2 teaspoons) of plain white vinegar to 2% or 3% milk, stir and let sit a minute. It&#039;s that simple!]]></description>
