Almonds are a fantastic (and more cost effective) switch, Joey. And adding a few soft boiled eggs is a perfect protein addition to make it an ideal light meal. Sounds perfectly spring/summer for me! Enjoy :)]]></description>

					<description><![CDATA[A simple gem of a side dish. We always have a large bag of carrots on hand in the fridge since they last so long. I have not tried the recipe as instructed with raisins and pine nuts (don&#039;t usually have pine nuts on hand in the pantry), but I have had almond slivers/slices on hand time to time and added those. The subbed almonds go nicely with the dish. I turn this dish into an elegant lunch for my wife and I by adding a couple of soft boiled eggs per person. We just need now a lovely French countryside or a park in Paris to picnic.]]></description>
