Hello, Jianna! Now, I’ve never made this cake in a springform pan, but I think it would work. The batter isn’t necessarily runny, but to be absolutely sure, I’d place a sheet of parchment under the pan to catch any drippings that may fall. And grease the walls of the pan well to ensure it doesn’t stick.

I can’t be certain it won’t leak, but I think, as long as it’s well fitted and not loose, it should hold. Please enjoy!

In reply to Audrey. I used a 9” springform, and I pulled it from our oven at 40 minutes, so no real difference. It’s delicious, and half gone!

Oh, wow… Buttermilk. That sounds like a great replacement for crème fraiche, David – I hadn’t thought of that. That similar tang, though different in consistency. Did you notice any difference in baking time from what the recipe dictated, or was it similar?

Just made this, and it was super easy with your instructions. Only change was to use cultured buttermilk instead of the crème fraiche. 30 minutes after pulling it out, I cut the first (and soon after, the second) slice and it’s delicious! Moist crumb w the almond crunch on top. New member of my regular rotation roster!
