					<description><![CDATA[This was absolutely amazing. This is my first time making a quiche in a very long time so I wasn’t sure how it would turn out, but wow! It was so light and fluffy and delicious! I did the recipe with red peppers because I don’t like eggplant. I cooked the veggies till they were cooked down really well and it turned out perfect. The flavour with the Gruyère cheese made it really nice. Great light dinner with a salad for a hot summer night. This will be made again. I subbed out the eggplant for 2 handfuls of spinach added raw on top of the other cooked vegetables before adding the eggs.  Beautiful way to showcase summer vegetables, and healthy too.]]></description>
